If you haven’t seen Establishing a Food Forest the Permaculture Way, you need to watch it.
Somebody posted the whole thing to YouTube. It’s sure to get yanked soon, so watch it while you can. Totally inspiring.

Thank you, thank you for this!! I have just begun researching food forests.

Absolutely – it's a wonderful project to undertake, especially for a raw chef like yourself. If you have any questions, ask away. They're a personal obsession of mine. I've got one in Marion County, one in Broward.
Thanks! There is one at Florida Gulf Coast Univ. but I have not seen it yet. I am going to look at it next week and hopefully some people will be there so I can ask some questions.
Peace.
I've heard that one is quite impressive even though it's a young system. I met a cat today who has taken part in its development. If you go by, let me know how it is!
What did you use as your groundcover?? am also in Florida. Do you think peanut grass could work?
Perennial peanut? Yes, definitely. Sweet potatoes are my favorite, though. I also toss out cover crop mixes that include lentils, rye, mustard, turnips and chick peas in winter… or southern peas, mung beans and buckwheat in spring and fall.
