David, the process for extracting the starch from Kudzu is pretty much the process of pulling the starch out of Canna lily (achira) that you are using as a biomass.
Commercially in Colombia they use rasps instead of a blender with the achira rhizomes, since they are processing tons at the time, and they squeeze the starch into settling tubs for washing the dark color out of the starch, through three or so rinses.
I suspect you could use a purpose bought garbage disposal for grinding.
The starch is called almidon, chuño or sagú, though in other areas chuño means dried potato starch, and sagú means starch from the sago palm
Traditionally, the paste is dried on the same flat areas they dry coffee beans.
