Ate my first true yam tonight, I made French fries cooked in butter and bacon grease. I found the raw yam to be slimey after cutting it. This was a Name yam I grew from a tuber I cut up after buying it from Publix. Not as good as potato fries, a bitter gamey taste. Not bad, it’s perfect survival food. I still need to sample the bulbil yams I grew and I hope they are better. Name doesn’t store well over winter and when they run out I won’t buy more. The bulbil yams I got from scrubland Sam I plan to guerilla grow all over the empty lots here as stealth emergency food.
The sliminess of the raw name yam has me wondering if I dip them in cornstarch before frying will it ease that slight bitter gamey taste of name yams? I will fing out next time I fry.
TY Mr the good for introducing me to yams so now I have a high calorie survival food I can rely on. Now let’s just see if my banasnas ever make racks because green banana fries are probably really good too.
It helps to boil them until fork tender, dry them off, then roast or fry them.
