In my early days of survival gardening, I got very excited about Jerusalem artichokes. We grew a big, beautiful patch of them in Tennessee from a friend who shared roots.
The flowers were lovely, and after the plants froze in fall, we dug and ate some tubers.
And then… well… if you haven’t seen it, I think you’ll enjoy this video on why Jerusalem artichokes are NOT the best survival crop!Â
As a friend writes:
“I grew them in like 1974 in my mom’s garden. They don’t taste magically delicious, and the flatulence was … catastrophic.”
